The beans were Panama Boquete – Finca Hortigal, and after a bit of dialling in (and a mild amount of staring at the grinder like it might blink first), I landed on what can only be described as the sweet spot.
18.5g in, 45g out, 20 seconds. Boom.
The extraction flowed beautifully. No sputtering, no panic, just a smooth, syrupy pour crowned with an impressive golden crema. At that moment, I knew this was going to be a good coffee.
Straight espresso delivered exactly what I was hoping for: milk chocolate upfront, followed by a subtle citrus lift that kept everything lively without slapping you in the face. Balanced, clean, and dangerously drinkable.
Now, as much as I enjoy sipping espresso and pretending I can identify flavour notes with my eyes closed, my heart belongs to the flat white. So on to the milk. Heated gently to around 65°C — hot enough to be comforting, not hot enough to scorch dreams.

Let’s just say…it needs work.
But honestly, once the cup was in my hands, I closed my eyes and let the coffee do the talking. And suddenly I wasn’t in my kitchen anymore — I was in Panama. Sun, altitude, coffee trees, the whole thing. (Okay, maybe that was the caffeine talking, but still.)
One sip in and boy was it good. Smooth, chocolatey, lifting citrus notes cutting through the milk perfectly. Proof that you don’t need a spaceship espresso machine to make exceptional coffee. Just good beans, a bit of patience, and the willingness to trust your grind.
